In the case of this honey, hives are taken to the Yorkshire Moors for the month of August where the main forage is the heather Caluna Vulgaris.  This a very specialised connoisseur’s honey.  It is highly viscous and when pure, cannot be spun from combs.  We therefore sell it as piece of untreated comb, or press the combs to extract.  It has fine air bubbles locked into the honey - which you can see - and is dark in colour, very aromatic to the nose, and has a strong smoky/peaty flavour.  This is an unpredictable crop because of the adverse weather to be expected at that time of year, at altitude (for England).
